Leek Soufflé with Provolone Valpadana PDO


The recipe

Ingredients (for 4 people)

Leeks: 3
Butter: 30 g
Flour: 3 cucchiai
Warm milk: 200 g
Provolone Valpadana PDO: 180 g
Yolks: 3
Egg whites: 4
lack pepper
Extra-virgin olive oil
Thinly slice leeks and sauté in a little oil. 
In another saucepan, melt butter over low heat, add flour and mix rapidly. 
Add milk gradually and continue stirring until mixture thickens.
Remove saucepan from heat and add grated Provolone Valpadana PDO, thyme, a generous grind of black pepper, salt, leeks and egg yolks.
Beat egg whites into peaks and gently fold into milk and cheese mixture. 
Fill 8 buttered molds and bake in a bain-marie in pre-heated 180°C oven for about 20 minutes.
